Aurora Borealis – A Cocktail Inspired by the Northern Lights

At The Barologist (our bar in Leith), everything we create is inspired by the weather—from the

decor to the drinks. It’s not just a theme; it’s a feeling, a story in every glass.

For our Operations Director, one of the most magical weather moments comes from my

childhood in Thurso, a small town nestled in the far north of Scotland. Growing up there, we

were often treated to breathtaking displays of the Aurora Borealis. On clear nights, we’d look up

and see waves of purples, blues, and pinks dancing across the sky—sometimes even

shimmering behind the clouds. It felt like nature’s own silent symphony, playing just for us.

That memory became the heart of our Aurora Borealis cocktail.

This drink is a visual and flavorful tribute to those skies. We start with Boe Violet Gin, known for

its vibrant purple hue, and pair it with Crème de Mûre to deepen the color and add a rich berry

sweetness. It’s shaken with fresh lemon juice for a bright citrus balance, and egg white to

create a soft, cloud-like foam. The finishing touch? A crown of candy floss, symbolizing the

wispy clouds that often drifted through those light shows in the sky.
