If you’ve ever wandered through Leith and stepped into The Barologist, chances are you’ve experienced our unique world of curious cocktails, cosy corners, and a touch of theatrical flair.

Since opening our doors, we've poured our passion into every drink, creating a home-from-home for cocktail lovers who enjoy a bit of magic with their mixology.

Created in 2019 at the very beginning of The Barologist journey, the Flat White Martini has quickly become one of our best-selling cocktails – and for good reason. Inspired by the iconic Espresso Martini, this indulgent twist swaps sharpness for smoothness, offering a sweeter, creamier experience that coffee cocktail lovers adore.

When Durham Cricket Club reached out to us at The Barologist, we knew this was going to be something special. They were planning a unique event — The Wizard of Oz Drone Show — and wanted our Horsebox Cocktail Bar to bring the magic with a bespoke, film-inspired cocktail menu.

The Barologist in Leith has always been a place of mystery, invention, and adventure. Founded on the legend of George Armstrong, an eccentric inventor with a passion for meteorology and mixology, The Barologist became a home for those seeking both comfort and creativity in a glass. But now, the story takes a new turn.

George has left his home in Leith, taking his passion for inventive cocktails on the road. The Barologist (is) On Tour, travelling far and wide in our newly transformed horsebox bar.
